  • 2 tablespoons unsalted butter

Instructions

  1. In a large mixing bowl, combine flour, sugar, and salt. Add the cold cubed butter and work it into the dry ingredients until coarse crumbs form. Mix in the beaten egg and vanilla extract until dough begins to come together. Shape into a disc, wrap in plastic, and refrigerate for 30 minutes.
  2. For the filling, melt butter in a saucepan over medium heat. Add light brown sugar and stir until smooth. Slowly pour in heavy cream and cook, stirring, for about 5 minutes until thickened. Remove from heat and let cool slightly.
  3. Preheat oven to 350°F (175°C). Roll out chilled dough on a floured surface to fit your pie dish. Transfer to dish, trim excess, and prick the bottom with a fork. Pour caramel filling into the crust, spreading evenly. Add chopped nuts if desired.
  4. Bake for 40-45 minutes until filling is bubbly and crust is golden. Cool for at least 15 minutes before serving to allow filling to set.
