Ingredients
Scale
- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Cinnamon Swirl: 1/4 cup brown sugar, 1 tablespoon ground cinnamon
Instructions
- Preheat your oven to 350Β°F (175Β°C). Grease a loaf pan with butter or nonstick spray. Mix together the brown sugar and cinnamon to prepare the cinnamon swirl mixture.
- In a large bowl, mash ripe bananas until smooth. Add melted butter, eggs, and vanilla extract, stirring well to combine.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients into the wet mixture, mixing just until incorporated.
- Pour half of the batter into the prepared loaf pan. Sprinkle evenly with the cinnamon sugar mixture. Add the remaining batter on top and swirl gently with a knife to create a cinnamon swirl pattern.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack.
Notes
- Use overripe bananas for the best flavor and sweetness.
- Do not overmix the batter to keep the bread moist and tender.
- Can be stored in an airtight container at room temperature for up to 2 days or refrigerated for up to 1 week.
- To reheat, warm slices in the microwave or oven for a fresh taste.
