- 4 (6-ounce) halibut fillets
- 1 cup panko breadcrumbs
- 1/4 cup fresh parsley, finely chopped
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh chives, minced
- 1 tablespoon lemon zest
- 2 cloves garlic, minced
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- Lemon wedges for serving
Instructions
- Pat halibut fillets dry with paper towels and prepare all fresh herbs
- Combine panko breadcrumbs, parsley, dill, chives, lemon zest, garlic, salt, and pepper in a bowl
- Brush each halibut fillet with Dijon mustard and press mustard-coated side into breadcrumb mixture
- Preheat oven to 400°F (200°C) and heat olive oil in an oven-safe skillet
- Sear fillets crust-side down for 2-3 minutes until golden brown, then flip and transfer to oven
- Bake for 8-10 minutes until fish flakes easily with a fork
- Let rest for 3 minutes before serving with lemon wedges
Notes
- For extra crispy crust, broil for the last 1-2 minutes of cooking
- Substitute any firm white fish if halibut isn’t available
- Use gluten-free breadcrumbs for a dietary-friendly version
- Fresh herbs make all the difference – don’t substitute dried
