- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, cold and diced
- 4–5 ripe peaches, peeled and sliced
- 1/2 cup brown sugar
- 1 teaspoon lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/2 cup rolled oats (optional, for topping)
Instructions
- In a mixing bowl, combine all-purpose flour, granulated sugar, salt, and baking powder. Add the diced cold butter and use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs. Press the dough evenly into the bottom of a greased 9×13-inch baking dish. Chill in the refrigerator for 15-20 minutes.
- In a separate bowl, toss the sliced peaches with brown sugar, lemon juice, cornstarch, and vanilla extract. Ensure the peaches are well coated. Spread the peach mixture evenly over the chilled crust.
- If desired, sprinkle rolled oats on top of the peach filling for added crunch. You can also sprinkle some more brown sugar if you like a sweeter topping.
- Preheat your oven to 350°F (175°C). Bake the bars for 35-40 minutes, or until the top is golden and the filling is bubbly. Remove from the oven and allow to cool completely before cutting into bars.
Notes
- For extra crunch, sprinkle rolled oats on top before baking.
- Use ripe, juicy peaches for optimal flavor and texture.
- Can be stored in an airtight container at room temperature for 2 days or refrigerated for up to 5 days. Freezing for longer storage is also an option.
