  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, cold and diced
  • 45 ripe peaches, peeled and sliced
  • 1/2 cup brown sugar
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup rolled oats (optional, for topping)

Instructions

  1. In a mixing bowl, combine all-purpose flour, granulated sugar, salt, and baking powder. Add the diced cold butter and use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs. Press the dough evenly into the bottom of a greased 9×13-inch baking dish. Chill in the refrigerator for 15-20 minutes.
  2. In a separate bowl, toss the sliced peaches with brown sugar, lemon juice, cornstarch, and vanilla extract. Ensure the peaches are well coated. Spread the peach mixture evenly over the chilled crust.
  3. If desired, sprinkle rolled oats on top of the peach filling for added crunch. You can also sprinkle some more brown sugar if you like a sweeter topping.
  4. Preheat your oven to 350°F (175°C). Bake the bars for 35-40 minutes, or until the top is golden and the filling is bubbly. Remove from the oven and allow to cool completely before cutting into bars.
