- 2 pounds beef stew meat, cubed
- 1 onion, chopped
- 3 garlic cloves, minced
- 3 carrots, diced
- 2 potatoes, peeled and diced
- 1 can diced tomatoes
- 1 can kidney beans, drained
- 4 cups beef broth
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sear beef cubes until browned, then set aside.
- Sauté onion and garlic until fragrant.
- Add carrots, potatoes, and beef back to the pot.
- Pour in diced tomatoes, beans, and beef broth.
- Season with paprika, salt, and pepper.
- Bring to a boil, then reduce heat to low and simmer for 1.5 hours, until beef is tender.

- You can add corn or peas for extra flavor.
- Serve with crusty bread or cornbread.
