Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 2 potatoes, diced
  • 4 cups chicken broth
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced kielbasa and cook until browned. Remove and set aside.
  2. In the same pot, sauté chopped onion, carrots, and celery until tender.
  3. Add diced potatoes, chicken broth, smoked paprika, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes, until vegetables are cooked through.
  5. Return kielbasa to the pot and simmer for another 5 minutes.
  6. Garnish with chopped parsley before serving.
