- 1 pound kielbasa sausage, sliced
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, diced
- 3 celery stalks, diced
- 2 potatoes, diced
- 4 cups chicken broth
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced kielbasa and cook until browned. Remove and set aside.
- In the same pot, sauté chopped onion, carrots, and celery until tender.
- Add diced potatoes, chicken broth, smoked paprika, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes, until vegetables are cooked through.
- Return kielbasa to the pot and simmer for another 5 minutes.
- Garnish with chopped parsley before serving.
Notes
- You can substitute fresh vegetables with frozen for convenience.
- Add a splash of hot sauce for extra heat.
- This soup pairs well with crusty bread or rolls.
