- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 cup cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- Red onion, thinly sliced
- Fresh parsley, chopped
- ½ cup tzatziki sauce
Instructions
- Preheat grill to medium-high heat.
- Mix olive oil, oregano, garlic powder, salt, and pepper. Marinate chicken for 10 minutes.
- Grill chicken for 6-7 minutes per side, until cooked through. Rest and slice.
- Divide cooked rice or greens into bowls.
- Top with sliced chicken, cherry tomatoes, cucumber, red onion, and parsley.
- Drizzle with tzatziki sauce and serve.
Notes
- You can substitute grilled chicken with tofu for a vegetarian version.
- Best enjoyed fresh but can be stored refrigerated for up to 2 days.
