- 1 lb chicken breast, diced
- 1 1/2 cups orzo pasta
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until browned. Remove and set aside.
- In the same skillet, add garlic and cook until fragrant. Stir in orzo and cook for 2 minutes.
- Add chicken broth, bring to a boil, then reduce heat and simmer uncovered for 10 minutes, or until orzo is tender.
- Stir in cherry tomatoes, spinach, and cooked chicken. Cook until spinach wilts and everything is heated through, about 3 minutes.
- Serve hot, garnished with fresh herbs if desired.

- Feel free to add grated Parmesan or a squeeze of lemon for extra flavor.
