Instructions
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tablespoon olive oil, paprika, salt, and pepper. Roast for 25-30 minutes until crispy and golden.
- While roasting, season diced chicken with salt and pepper. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook chicken until browned and cooked through, about 7-8 minutes.
- In a bowl, assemble cooked rice, roasted sweet potatoes, cooked chicken, cherry tomatoes, and greens. Drizzle with your favorite sauce and garnish with herbs. Serve immediately.
