- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 3 tablespoons soy sauce or tamari
- 2 tablespoons honey or maple syrup
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- Salt and pepper to taste
- Optional garnish: chopped green onions, sesame seeds, cilantro
Instructions
- Prepare the marinade by whisking together soy sauce, honey, olive oil, garlic, and ginger in a small bowl.
- Marinate the chicken breasts in half of the marinade for at least 30 minutes in the refrigerator.
- Preheat oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper or lightly grease it.
- Arrange the marinated chicken breasts on the prepared sheet pan, leaving space between each.
- Surround the chicken with the sliced bell peppers, zucchini, red onion, and pineapple chunks. Drizzle remaining marinade over the vegetables and add a little more olive oil if desired.
- Roast in the oven for 25-30 minutes, until the chicken is cooked through and vegetables are tender. Occasionally spoon juices over the chicken.
- Remove from oven, garnish with green onions, sesame seeds, or cilantro. Serve hot for a tropical Hawaiian-inspired meal.
Notes
- For juicier chicken, use thighs instead of breasts; adjust cooking time accordingly.
- You can substitute pineapple with mango, peaches, or mandarin oranges for a different tropical twist.
