  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • Salt and pepper to taste
  • Optional garnish: chopped green onions, sesame seeds, cilantro

Instructions

  1. Prepare the marinade by whisking together soy sauce, honey, olive oil, garlic, and ginger in a small bowl.
  2. Marinate the chicken breasts in half of the marinade for at least 30 minutes in the refrigerator.
  3. Preheat oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper or lightly grease it.
  4. Arrange the marinated chicken breasts on the prepared sheet pan, leaving space between each.
  5. Surround the chicken with the sliced bell peppers, zucchini, red onion, and pineapple chunks. Drizzle remaining marinade over the vegetables and add a little more olive oil if desired.
  6. Roast in the oven for 25-30 minutes, until the chicken is cooked through and vegetables are tender. Occasionally spoon juices over the chicken.
  7. Remove from oven, garnish with green onions, sesame seeds, or cilantro. Serve hot for a tropical Hawaiian-inspired meal.

  • For juicier chicken, use thighs instead of breasts; adjust cooking time accordingly.
