Ingredients

  • 4 large portobello mushrooms, stems removed
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 4 burger buns
  • Your favorite burger toppings (lettuce, tomato, onion, avocado, cheese, etc.)

Instructions

  1. Clean the mushroom caps with a damp cloth and remove the stems.
  2. In a bowl, whisk together balsamic vinegar, olive oil, garlic, soy sauce, thyme, and pepper to make the marinade.
  3. Marinate the mushrooms in a shallow dish or resealable bag for at least 30 minutes.
  4. Preheat the grill to medium heat (350-400ยฐF).
  5. Place mushrooms on the grill, cap-side down, and grill for 5-7 minutes per side.
  6. Add cheese during the last minute of grilling, if desired.
  7. Assemble the burgers with lettuce, tomato, onion, and any other toppings.
