Ingredients

  • 4 ripe but firm peaches, halved and pitted
  • 5 ounces mixed greens
  • 4 ounces goat cheese, crumbled
  • Β½ cup toasted pecans or walnuts
  • ΒΌ cup red onion, thinly sliced
  • 2 tablespoons balsamic vinegar
  • 4 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Gently wash the peaches and pat them dry. Cut each peach in half and remove the pit.
  2. Preheat your grill to medium heat. Lightly brush the cut sides of the peaches with olive oil and grill cut-side down for about 4-5 minutes.
  3. In a large bowl, combine mixed greens, crumbled goat cheese, toasted pecans, and thinly sliced red onion. Let grilled peaches cool slightly, slice into wedges, and add to the bowl.
  4. In a small bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper. Pour over the salad and gently toss to combine. Serve immediately.
