- 4 ripe but firm peaches, halved and pitted
- 5 ounces mixed greens
- 4 ounces goat cheese, crumbled
- Β½ cup toasted pecans or walnuts
- ΒΌ cup red onion, thinly sliced
- 2 tablespoons balsamic vinegar
- 4 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Gently wash the peaches and pat them dry. Cut each peach in half and remove the pit.
- Preheat your grill to medium heat. Lightly brush the cut sides of the peaches with olive oil and grill cut-side down for about 4-5 minutes.
- In a large bowl, combine mixed greens, crumbled goat cheese, toasted pecans, and thinly sliced red onion. Let grilled peaches cool slightly, slice into wedges, and add to the bowl.
- In a small bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper. Pour over the salad and gently toss to combine. Serve immediately.

- Choose peaches that are ripe but still firm to hold their shape on the grill.

- Toast the nuts for added flavor and crunch.
