Grilled Halloumi Skewers: A Mediterranean Delight on a Stick! These vegetarian kebabs combine the unique salty flavor of halloumi cheese with fresh vegetables, perfect for summer barbecues or a light weeknight dinner.

Ingredients

  • 250g Halloumi cheese, cut into 1-inch cubes
  • 1 Red bell pepper, cut into 1-inch pieces
  • 1 Yellow bell pepper, cut into 1-inch pieces
  • 1 Zucchini, cut into 1/2-inch slices
  • 1 Red onion, cut into wedges
  • 1 pint Cherry tomatoes
  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1 tsp Dried oregano
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. Wash and chop all the vegetables according to the ingredient list.
  2. Thread the halloumi cubes and vegetables onto the skewers, alternating for a colorful presentation.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper; brush over skewers.
  4. Preheat grill to medium heat, then grill skewers for 8-10 minutes, turning occasionally until halloumi is golden and vegetables are tender.

Notes

  • Don’t overcrowd the skewers for even cooking.
  • Grill at medium heat to prevent burning.
  • Use a grill basket to avoid vegetables falling through.
  • Best served immediately off the grill!
