- 250g Halloumi cheese, cut into 1-inch cubes
- 1 Red bell pepper, cut into 1-inch pieces
- 1 Yellow bell pepper, cut into 1-inch pieces
- 1 Zucchini, cut into 1/2-inch slices
- 1 Red onion, cut into wedges
- 1 pint Cherry tomatoes
- 2 tbsp Olive oil
- 1 tbsp Lemon juice
- 1 tsp Dried oregano
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- Wash and chop all the vegetables according to the ingredient list.
- Thread the halloumi cubes and vegetables onto the skewers, alternating for a colorful presentation.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper; brush over skewers.
- Preheat grill to medium heat, then grill skewers for 8-10 minutes, turning occasionally until halloumi is golden and vegetables are tender.
Notes
- Donβt overcrowd the skewers for even cooking.
- Grill at medium heat to prevent burning.
- Use a grill basket to avoid vegetables falling through.
- Best served immediately off the grill!
