Ingredients
- Chicken breasts: 1.5 lbs, boneless and skinless
- Pita bread: 6-8 pieces
- Olive oil: 3 tablespoons
- Lemon juice: 2 tablespoons
- Garlic: 3 cloves, minced
- Dried oregano: 1 teaspoon
- Dried thyme: 1/2 teaspoon
- Salt and pepper to taste
- Lettuce: 1 cup, shredded
- Tomatoes: 1 medium, diced
- Cucumber: 1/2, diced
- Red onion: 1/4, thinly sliced
- Tzatziki sauce: 1 cup (store-bought or homemade)
Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper. Add the chicken breasts to the bowl and coat with the marinade. Cover and refrigerate for at least 30 minutes.
- Preheat your grill or grill pan to medium-high heat. Remove chicken from the marinade and place on the grill, cooking for 6-8 minutes per side until the internal temperature reaches 165°F (74°C). Let rest and slice.
- While the chicken is grilling, prepare your toppings: shred lettuce, dice tomatoes and cucumber, and slice red onion.
- Warm pita bread on the grill or skillet. Spread tzatziki sauce, add chicken, lettuce, tomatoes, cucumber, and onion. Fold or roll to create gyros and serve immediately.
