  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 pita breads
  • 1 cup tzatziki sauce (store-bought or homemade)
  • 1 cucumber, peeled, seeded, and chopped
  • 1 tomato, chopped
  • 1/2 red onion, thinly sliced
  • Optional: Feta cheese, Kalamata olives

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Add chicken pieces to the marinade, coat well, and refrigerate for at least 30 minutes.
  2. Preheat your grill to medium-high. If using wooden skewers, soak them in water for 30 minutes. Thread marinated chicken onto skewers and grill for 6-8 minutes per side until cooked through.
  3. While the chicken grills, chop cucumber, tomato, and red onion into bite-sized pieces.
  4. Warm pita breads and spread tzatziki sauce on each. Add grilled chicken, chopped veggies, and top with feta cheese and olives. Fold and serve your homemade chicken gyros.

  • For extra flavor, add fresh lemon juice after grilling.
  • Adjust garlic and spice amounts in the marinade as desired.
  • Different chicken cuts can also be used, but avoid overcooking.
