- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 pita breads
- 1 cup tzatziki sauce (store-bought or homemade)
- 1 cucumber, peeled, seeded, and chopped
- 1 tomato, chopped
- 1/2 red onion, thinly sliced
- Optional: Feta cheese, Kalamata olives
Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Add chicken pieces to the marinade, coat well, and refrigerate for at least 30 minutes.
- Preheat your grill to medium-high. If using wooden skewers, soak them in water for 30 minutes. Thread marinated chicken onto skewers and grill for 6-8 minutes per side until cooked through.
- While the chicken grills, chop cucumber, tomato, and red onion into bite-sized pieces.
- Warm pita breads and spread tzatziki sauce on each. Add grilled chicken, chopped veggies, and top with feta cheese and olives. Fold and serve your homemade chicken gyros.
Notes
- For extra flavor, add fresh lemon juice after grilling.
- Adjust garlic and spice amounts in the marinade as desired.
- Different chicken cuts can also be used, but avoid overcooking.
- Add paprika or chili flakes for a spicy kick.
- Serve with fries or Greek salad for a complete meal.
- Make tzatziki by mixing Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, and dill.
