For the Tzatziki Sauce:

  • 1 cup Greek yogurt (or plain full-fat yogurt)
  • 1 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Combine ground turkey, red onion, garlic, oregano, thyme, cumin, salt, and pepper. Mix thoroughly to evenly incorporate flavors.
  2. Divide the mixture into four equal parts and shape each into a patty about 3/4 inch thick, handling gently.
  3. Heat olive oil or prepare your grill to medium-high. Cook the patties for 4-5 minutes per side until fully cooked and golden brown, ensuring an internal temperature of 165°F (74°C).
  4. In a bowl, mix Greek yogurt with grated cucumber, garlic, dill, lemon juice, salt, and pepper. Chill for at least 15 minutes to meld flavors.
  5. Toast burger buns lightly. Spread Tzatziki sauce on the bottom buns.
  6. Layer with spinach or lettuce, add the cooked turkey patties, then top with tomato, red onion, and extra Tzatziki sauce. Cover with the top bun and serve immediately.
