- 4 cups of chopped carrots
- 1 tablespoon of grated fresh ginger
- 4 cups of vegetable broth
- 2 tablespoons of olive oil

Instructions
- Heat the olive oil in a large pot over medium heat. Add chopped carrots and grated ginger, and sauté for 5-7 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20-25 minutes until carrots are very tender.
- Blend the soup until smooth using an immersion blender or regular blender in batches.
- Ladle the soup into bowls and garnish as desired. Serve hot.
