- 1 Β½ pounds ground chicken
- 1 cup bread crumbs
- 2 large eggs
- 3 cloves garlic, minced
- Β½ cup grated Parmesan cheese
- ΒΌ cup chopped fresh parsley
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Β½ cup milk or chicken broth
- Optional: chopped onions or bell peppers for added flavor
Instructions
- In a large mixing bowl, combine ground chicken, bread crumbs, eggs, minced garlic, Parmesan cheese, parsley, oregano, salt, and pepper. Mix until well incorporated. Add milk or chicken broth for moisture and mix thoroughly.
- Transfer the mixture to a greased loaf pan or shape into a loaf on a baking sheet. Add chopped onions or peppers on top if desired.
- Bake in a preheated oven at 375Β°F (190Β°C) for 50-60 minutes, until internal temperature reaches 165Β°F. Cover with foil if needed to retain moisture, removing it in the last 10 minutes for a crispy top.
- Once baked, let the meatloaf rest for 10 minutes before slicing. Sprinkle additional Parmesan and parsley as garnish.
Notes
- For extra flavor, add chopped onions or bell peppers into the mixture or on top.
- Use gluten-free bread crumbs if you need a gluten-free version.
- To keep the meatloaf moist, prevent overbaking and cover with foil during the first half of baking.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
