- 1–2 jalapeños, finely chopped
- 1 teaspoon cumin
- Fresh cilantro and lime wedges for garnish
Instructions
- Marinate the chicken in buttermilk for at least 30 minutes to tenderize and enhance flavor.
- Combine flour, panko breadcrumbs, chili powder, cumin, salt, and pepper in a shallow dish.
- Remove chicken from buttermilk, let excess drip, then coat thoroughly in the seasoned flour mixture.
- Heat vegetable oil to 350°F (175°C) in a deep skillet or fryer.
- Fry chicken strips in batches until golden brown and cooked through (about 4-6 minutes), then drain on paper towels.
- Grill or char fresh corn until slightly blackened, then cut kernels off the cob or drain canned corn and sauté lightly.
- Mix cooked corn with mayonnaise, salt, pepper, chili powder, and smoked paprika if desired.
- Whisk together mayonnaise, sour cream, lime juice, chopped jalapeños, and cilantro for the ranch sauce.
- Warm tortillas, spread jalapeño lime ranch over each, then layer with crispy fried chicken, street corn, and garnishes like cilantro and lime wedges.
