Instructions
- Season the beef roast generously with salt, pepper, and herbs.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat; sear the beef until browned on all sides.
- Transfer the beef to a slow cooker or oven and cook slowly until forks-tender, about 3-4 hours. Use a pressure cooker or Instant Pot for quicker results.
- Make the au jus by combining drippings, beef broth, red wine, garlic, herbs, and seasonings; simmer on low until flavors meld.
- Thinly slice the cooked beef against the grain.
- Slice hoagie rolls lengthwise and spread butter on the cut sides; toast until golden brown.
- Fill each roll with beef slices, then serve with a side of warm au jus for dipping.
