  • Total Time: 1 hour 10 minutes
  • Yield: 6 servings

Ingredients

Scale
  • 1 ½ pounds ground beef or turkey
  • 1 cup Italian-seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup chopped fresh basil
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce or pizza sauce
  • Optional: sliced black olives, red pepper flakes

Instructions

  1. In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan, eggs, basil, garlic powder, salt, and pepper. Mix until all ingredients are well incorporated.
  2. Shape half of the meat mixture into a large rectangle on a baking sheet. Spoon marinara sauce over the center, then sprinkle with shredded mozzarella and optional toppings.
  3. Carefully cover the filling with the remaining meat mixture, sealing the edges to retain the stuffing inside.
  4. Preheat oven to 375°F (190°C). Bake the meatloaf for 50-60 minutes or until internal temperature reaches 160°F (70°C). Broil for 2-3 minutes for a crispy top if desired.
  5. Remove from oven, let rest for 10 minutes, then slice and serve hot with extra marinara sauce.

Notes

  • Enhance flavor by adding sun-dried tomatoes or fresh oregano to the meat mixture.
  • Try different cheeses like provolone or ricotta for variation.
  • For an easy alternative, use a crock-pot to cook the meatloaf slowly and keep it moist.
