- 4 cod fillets
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 cup coconut milk
- Juice and zest of 1 lemon
- 2 cloves garlic, minced
- Fresh herbs (parsley or cilantro), for garnish
- Coconut flakes, optional for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Season cod fillets with salt and pepper. Drizzle with olive oil.
- Bake for 15-20 minutes until flaky and cooked through.
- Meanwhile, in a saucepan, combine coconut milk, lemon juice, lemon zest, and garlic. Simmer until slightly thickened.
- Serve the baked cod topped with the coconut lemon sauce and garnish with herbs and coconut flakes.
Notes
- Ensure not to overcook the fish to keep it flaky.
- You can add a pinch of chili flakes for extra heat.
