  • 2 boneless, skinless chicken breasts or thighs, sliced thin
  • 4 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste (optional for depth)
  • 2 teaspoons Sriracha or other hot sauce
  • 1 tablespoon gochujang (Korean chili paste) or chili oil
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, sliced
  • 1 cup sliced shiitake mushrooms (optional)
  • 2 green onions, sliced
  • 1 boiled egg (optional)
  • Vegetables like spinach, bok choy, or corn (optional)
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat. Add a tablespoon of oil and sautรฉ minced garlic and ginger until fragrant, about 1-2 minutes.
  2. Pour in chicken broth and stir in soy sauce, miso paste (if using), Sriracha, and gochujang or chili oil. Simmer for 10-15 minutes to develop the spicy broth flavors.
  3. Meanwhile, cook sliced chicken in a separate pan over medium-high heat until fully cooked and browned. Season with salt and pepper.
  4. If using vegetables like spinach, bok choy, or corn, add them to the broth during the last few minutes of simmering until tender.
  5. Braise a separate pot of water to cook ramen noodles according to package instructions until just tender. Drain and set aside.
  6. Divide cooked noodles into bowls. Ladle the hot broth with chicken and vegetables over the noodles. Garnish with sliced green onions and halved boiled eggs.

Notes

  • For an extra spicy kick, add more Sriracha or chili flakes.
  • You can substitute chicken with tofu for a vegetarian version.
