- 200g of fresh ramen noodles or instant ramen noodles
- 2 boneless, skinless chicken breasts or thighs, sliced thin
- 4 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon miso paste (optional for depth)
- 2 teaspoons Sriracha or other hot sauce
- 1 tablespoon gochujang (Korean chili paste) or chili oil
- 2 cloves garlic, minced
- 1 inch piece of ginger, sliced
- 1 cup sliced shiitake mushrooms (optional)
- 2 green onions, sliced
- 1 boiled egg (optional)
- Vegetables like spinach, bok choy, or corn (optional)
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat. Add a tablespoon of oil and sautรฉ minced garlic and ginger until fragrant, about 1-2 minutes.
- Pour in chicken broth and stir in soy sauce, miso paste (if using), Sriracha, and gochujang or chili oil. Simmer for 10-15 minutes to develop the spicy broth flavors.
- Meanwhile, cook sliced chicken in a separate pan over medium-high heat until fully cooked and browned. Season with salt and pepper.
- If using vegetables like spinach, bok choy, or corn, add them to the broth during the last few minutes of simmering until tender.
- Braise a separate pot of water to cook ramen noodles according to package instructions until just tender. Drain and set aside.
- Divide cooked noodles into bowls. Ladle the hot broth with chicken and vegetables over the noodles. Garnish with sliced green onions and halved boiled eggs.
Notes
- For an extra spicy kick, add more Sriracha or chili flakes.
- You can substitute chicken with tofu for a vegetarian version.
- Using fresh ramen noodles enhances the texture and flavor, but instant noodles work well in a pinch.
