Instructions
- Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large mixing bowl, beat the softened butter with granulated sugar and brown sugar until creamy. Add the egg and vanilla extract, mixing until well combined.
- Gradually add in the dry ingredients, mixing until just combined, and fold in the chocolate chips.
- Scoop the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, take one cookie and place a generous scoop of ice cream on top. Place a second cookie on top, gently pressing down to create the sandwich.
- For an extra crunch, roll the edges of the sandwich in sprinkles or nuts, if desired.
