Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or nonstick spray. Whisk together the dry ingredients: flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
- In a large bowl, mix sugars and vegetable oil until smooth. Beat in eggs one at a time. Add pumpkin puree, mashed bananas, and vanilla extract; mix well.
- Gradually fold dry ingredients into the wet mixture, stirring gently until just combined. Fold in chopped nuts if desired.
- Pour batter into the prepared loaf pan. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
- For a richer flavor, substitute some of the oil with appleauce or Greek yogurt.
- Add chocolate chips or dried fruit for extra sweetness.
- Ensure not to overmix the batter to maintain a moist crumb.
