Ingredients

Scale
  • 3 cups of all-purpose flour
  • 1 cup of granulated sugar
  • 1/2 teaspoon of salt
  • 1 teaspoon of baking soda
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1 cup of vegetable oil
  • 3 large eggs
  • 2 teaspoons of vanilla extract
  • 2 cups of peeled, chopped apples (Granny Smith or Honeycrisp work well)
  • Optional: 1/2 cup of chopped walnuts or pecans for added texture

Instructions

  1. Peel, core, and chop the apples into small pieces. Toss them with a little flour and set aside.
  2. In a large bowl, whisk together the flour, sugar, salt, baking soda, cinnamon, and nutmeg until combined.
  3. In a separate bowl, beat the eggs, then add the vegetable oil and vanilla extract. Mix until smooth.
  4. Gradually pour the wet ingredients into the dry ingredients, stirring gently. Fold in the chopped apples and nuts if using.
  5. Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
