Delight in these easy vegan apple puff pastry doughnuts—flaky, sweet, and tart bite-sized treats perfect for breakfast or snacks. Made with wholesome ingredients, these plant-based doughnuts are quick to prepare and irresistibly delicious.

  • Total Time: 30 minutes
  • Yield: 8 doughnuts

Ingredients

Scale
  • 1 sheet of vegan puff pastry (store-bought or homemade)
  • 2 medium apples, peeled and diced
  • 2 tablespoons maple syrup or agave nectar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ¼ cup coconut sugar or brown sugar
  • Optional toppings: vegan powdered sugar, cinnamon sugar, or icing

Instructions

  1. Start by heating a skillet over medium heat. Add the diced apples, maple syrup, cinnamon, and vanilla extract. Cook for about 5-7 minutes, stirring occasionally, until the apples soften and become fragrant. Remove from heat and let cool slightly.
  2. Preheat your oven to 375°F (190°C). Roll out the puff pastry sheet gently on a floured surface. Cut into individual squares or circles depending on your preferred doughnut shape. Place a spoonful of the cooked apple mixture in the center of each pastry piece.
  3. Carefully fold the puff pastry over the apple filling and pinch the edges together to seal. You can also use a small cookie cutter or a glass to cut out the doughnut shape for a more traditional look. Place the filled pastries on a baking sheet lined with parchment paper.
  4. Bake in the preheated oven for 15-20 minutes or until golden brown and crisp. Remove from the oven and allow to cool slightly before adding your favorite toppings.

Notes

  • For a sweeter glaze, drizzle with vegan icing or dust with powdered sugar before serving.
  • Use gluten-free puff pastry if you need a gluten-free version.
  • Make sure to cool the apple filling before filling the pastry to prevent sogginess.
