- 1 sheet of vegan puff pastry (store-bought or homemade)
- 2 medium apples, peeled and diced
- 2 tablespoons maple syrup or agave nectar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- ¼ cup coconut sugar or brown sugar
- Optional toppings: vegan powdered sugar, cinnamon sugar, or icing
Instructions
- Start by heating a skillet over medium heat. Add the diced apples, maple syrup, cinnamon, and vanilla extract. Cook for about 5-7 minutes, stirring occasionally, until the apples soften and become fragrant. Remove from heat and let cool slightly.
- Preheat your oven to 375°F (190°C). Roll out the puff pastry sheet gently on a floured surface. Cut into individual squares or circles depending on your preferred doughnut shape. Place a spoonful of the cooked apple mixture in the center of each pastry piece.
- Carefully fold the puff pastry over the apple filling and pinch the edges together to seal. You can also use a small cookie cutter or a glass to cut out the doughnut shape for a more traditional look. Place the filled pastries on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes or until golden brown and crisp. Remove from the oven and allow to cool slightly before adding your favorite toppings.
Notes
- For a sweeter glaze, drizzle with vegan icing or dust with powdered sugar before serving.
- Use gluten-free puff pastry if you need a gluten-free version.
