- 4 large russet potatoes, sliced into thin rounds

Instructions
- Preheat your oven to 400Β°F (200Β°C). Prepare all ingredients as listed, slicing potatoes and sausage.
- In a large bowl, toss potatoes, sausage, onions, garlic, olive oil, paprika, thyme, salt, and pepper until evenly coated.
- Arrange half of the mixture in a greased baking dish and sprinkle with half of the shredded cheddar cheese.
- Cover with aluminum foil and bake for 30 minutes. Remove foil, stir gently if needed, and bake uncovered for an additional 15 minutes until potatoes are tender and cheese is bubbly and golden.
- Garnish with chopped parsley if desired and serve hot with salad or crusty bread.
