- 1 lb chicken breast, sliced into strips
- 3 bell peppers (assorted colors), sliced
- 1 large onion, sliced
- 2 tbsp olive oil
- 2 tsp fajita seasoning
- Salt and pepper to taste
- ¼ cup shredded cheddar or Mexican cheese
- Fresh cilantro, chopped
- Lime wedges for serving
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add chicken strips and season with fajita seasoning, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add remaining olive oil, sliced peppers, and onions. Sauté until tender, about 5 minutes.
- Add cooked chicken back to the skillet, sprinkle with cheese, and warm until melted.
- Garnish with chopped cilantro and serve with lime wedges.
Notes
- You can customize the peppers by using your favorites or whatever is in season.
- For an extra smoky flavor, add a dash of smoked paprika.
- Serve with warm tortillas or rice for a complete meal.
