- 2 lbs beef chuck, cut into chunks
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef chunks, cook until browned on all sides.
- Remove beef and set aside.
- Sauté onions and garlic until translucent.
- Return beef to the pot, add carrots, potatoes, tomato paste, thyme, salt, and pepper.
- Pour in beef broth, bring to a boil.
- Reduce heat to low, cover, and simmer for 2 hours until beef is tender.
Notes
- For extra richness, add a splash of red wine during simmering.
- You can substitute beef with chicken or vegetables for variation.
