- 1 lb (450g) thinly sliced sirloin steak
- 2 bell peppers, sliced
- 1 small onion, sliced
- 1 cup shredded provolone cheese
- 4 low-carb tortillas
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Heat 1 tbsp olive oil in a skillet over medium-high heat. Add sliced steak, cook until browned, about 3-4 minutes. Remove and set aside.
- In the same pan, add remaining olive oil. Sauté peppers and onions until tender, about 5 minutes. Season with garlic powder, salt, and pepper.
- Return steak to the skillet, mix well, and heat through. Remove from heat and let cool slightly.
- Lay out tortillas flat. Divide steak mixture evenly on each tortilla, sprinkle with shredded cheese.
- Roll up tightly, fold in the sides, and secure if needed. Place in a baking dish and bake at 375°F (190°C) for 10-12 minutes until cheese melts and tortillas are crispy.
Notes
- You can substitute provolone with mozzarella or cheddar for different flavor profiles.
- For extra flavor, add sautéed mushrooms or spices like paprika.
