  • 1 lb (450g) thinly sliced sirloin steak
  • 2 bell peppers, sliced
  • 1 small onion, sliced
  • 1 cup shredded provolone cheese
  • 4 low-carb tortillas
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat 1 tbsp olive oil in a skillet over medium-high heat. Add sliced steak, cook until browned, about 3-4 minutes. Remove and set aside.
  2. In the same pan, add remaining olive oil. Sauté peppers and onions until tender, about 5 minutes. Season with garlic powder, salt, and pepper.
  3. Return steak to the skillet, mix well, and heat through. Remove from heat and let cool slightly.
  4. Lay out tortillas flat. Divide steak mixture evenly on each tortilla, sprinkle with shredded cheese.
  5. Roll up tightly, fold in the sides, and secure if needed. Place in a baking dish and bake at 375°F (190°C) for 10-12 minutes until cheese melts and tortillas are crispy.
