- 2 pounds beef stew meat, cut into cubes
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Brown the beef cubes until seared on all sides. Remove and set aside.
- Sauté onion and garlic until fragrant. Add tomato paste and cook for 2 minutes.
- Return beef to the pot, add carrots, potatoes, thyme, salt, and pepper. Pour in beef broth.
- Bring to a boil, then reduce heat and simmer uncovered for 1.5 to 2 hours, or until beef is tender and flavors meld.
- Adjust seasoning as needed and serve hot with bread.
Notes
- For richer flavor, simmer longer or use a slow cooker set on low for 6-8 hours.
- You can add peas or celery for extra texture.
