Ingredients

  • 2 pounds beef stew meat, cut into cubes
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Brown the beef cubes until seared on all sides. Remove and set aside.
  2. Sauté onion and garlic until fragrant. Add tomato paste and cook for 2 minutes.
  3. Return beef to the pot, add carrots, potatoes, thyme, salt, and pepper. Pour in beef broth.
