Instructions
- Start by chopping the vegetables and cutting the beef into evenly sized chunks. Season the beef with salt and pepper to enhance the flavor from the outset.

- Transfer the seared beef to your Crock-Pot Family-Size Slow Cooker. Add carrots, potatoes, chopped onion, garlic, tomato paste, herbs, and the beef broth. Stir to combine all ingredients evenly.
- Cover and cook on low for 6-8 hours or on high for about 4 hours. The slow cooking process makes the beef melt-in-your-mouth tender, and flavors meld beautifully.
- Remove bay leaves, taste, and adjust seasoning with salt and pepper. For a thicker stew, stir in a cornstarch slurry or mash some of the potatoes. Serve hot with crusty bread or a side salad.
