  • Total Time: 6 hours 20 minutes - 8 hours 20 minutes
  • Yield: 6 servings

Ingredients

Scale
  • 2 pounds beef chuck roast or stew meat, cut into chunks
  • 4 carrots, peeled and sliced
  • 3 potatoes, peeled and cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Start by chopping the vegetables and cutting the beef into evenly sized chunks. Season the beef with salt and pepper to enhance the flavor from the outset.
  2. In a skillet, heat the CAROTE Premium 16pc Nonstick Cookware Set, add olive oil, and sear the beef chunks until browned on all sides. This step adds depth to the stew and seals in the juices.
  3. Transfer the seared beef to your Crock-Pot Family-Size Slow Cooker. Add carrots, potatoes, chopped onion, garlic, tomato paste, herbs, and the beef broth. Stir to combine all ingredients evenly.
  4. Cover and cook on low for 6-8 hours or on high for about 4 hours. The slow cooking process makes the beef melt-in-your-mouth tender, and flavors meld beautifully.
  5. Remove bay leaves, taste, and adjust seasoning with salt and pepper. For a thicker stew, stir in a cornstarch slurry or mash some of the potatoes. Serve hot with crusty bread or a side salad.

Notes

  • Ensure all vegetables are chopped uniformly for even cooking.
  • You can substitute or add other vegetables like peas or green beans for variety.
  • For a thicker stew, mash some potatoes or add a cornstarch slurry during the final stage.
  • Reheat slowly to prevent drying out the meat and vegetables.
