Instructions
- Preheat your oven to 350°F (175°C). Line a muffin pan with paper liners or lightly grease it.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat the eggs, then add the applesauce, oil, vanilla, and brown sugar. Mix until smooth.
- Pour the wet ingredients into the dry and stir until just combined. Fold in nuts or raisins if desired.
- Divide the batter evenly into muffin cups. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool slightly before serving. Enjoy!
