- 2 lbs boneless, skinless chicken breasts or thighs, cut into chunks
- 1 cup tomato sauce or crushed tomatoes
- 1/2 cup plain Greek yogurt or heavy cream
- 4 tablespoons butter
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 teaspoons garam masala
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder (optional for heat)
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Gather all ingredients, chop the onion, garlic, and ginger, and cut chicken into chunks.
- Optional: sauté onion, garlic, and ginger in a skillet with 1 tbsp butter until fragrant.
- Layer the chicken, tomato sauce, aromatics (if sautéed), spices, salt, pepper, and remaining butter in the crockpot.
- Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours until chicken is tender.
- Stir in Greek yogurt or heavy cream towards the end of cooking.
- Garnish with chopped cilantro and serve hot.
Notes
- For a thicker sauce, remove the lid in the last 30 minutes to reduce.
- Add a splash of lemon juice before serving for extra brightness.
- Adjust spice levels to taste by increasing or omitting chili powder.
