- 2 pounds beef stew meat, cubed
- 4 large carrots, sliced
- 3 potatoes, diced

- 4 cups beef broth

- Salt and pepper to taste
Instructions
- Place beef cubes in the crock pot and season with salt and pepper.
- Add carrots, potatoes, onion, garlic, tomato paste, and thyme.
- Pour beef broth over ingredients.
- Cover and cook on low for 6-8 hours, until beef is tender.
- In the last 30 minutes, add peas and cook uncovered, stirring occasionally.

- Feel free to add other vegetables like celery or corn for variation.
- For a thicker stew, mash some potatoes before serving.
