  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 2 tablespoons brown sugar (for the cinnamon swirl)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan and set aside.
  2. In a large bowl, mash the ripe bananas until smooth. Add melted butter, sugar, eggs, and vanilla extract. Whisk until well combined and creamy.
  3. In a separate bowl, whisk together flour, baking soda, salt, and ground cinnamon.
  4. Gradually fold the dry ingredients into the wet mixture. Stir gently until just combined; do not overmix.
  5. Mix the brown sugar and additional cinnamon in a small bowl and set aside.
  6. Pour half of the batter into the prepared loaf pan. Sprinkle with half of the cinnamon-sugar mixture.
  7. Add the remaining batter on top and sprinkle with the rest of the cinnamon-sugar. Using a knife or skewer, gently swirl the layers to create a cinnamon swirl pattern.
  8. Bake at 350°F (175°C) for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
