- 3 ripe bananas, mashed
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups (240g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
- 2 tablespoons brown sugar (for the cinnamon swirl)
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan and set aside.
- In a large bowl, mash the ripe bananas until smooth. Add melted butter, sugar, eggs, and vanilla extract. Whisk until well combined and creamy.
- In a separate bowl, whisk together flour, baking soda, salt, and ground cinnamon.
- Gradually fold the dry ingredients into the wet mixture. Stir gently until just combined; do not overmix.
- Mix the brown sugar and additional cinnamon in a small bowl and set aside.
- Pour half of the batter into the prepared loaf pan. Sprinkle with half of the cinnamon-sugar mixture.
- Add the remaining batter on top and sprinkle with the rest of the cinnamon-sugar. Using a knife or skewer, gently swirl the layers to create a cinnamon swirl pattern.
- Bake at 350°F (175°C) for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Ensure bananas are very ripe for maximum sweetness and moisture.
- For added flavor, fold in chopped nuts or chocolate chips before baking.
- Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
- To freeze, wrap slices tightly and store in zip-top bags. Reheat slices in the microwave or toaster before serving.
