- 2 cups orzo pasta
- 1 lb boneless chicken breasts, cubed
- 2 tablespoons Cajun seasoning
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1/2 cup heavy cream
- Fresh parsley, chopped (for garnish)
Instructions
- Cook orzo in boiling salted water according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken with Cajun seasoning.
- Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Add garlic and sliced peppers, sauté for 2-3 minutes.
- Pour in chicken broth and heavy cream, simmer for 5 minutes until slightly thickened.
- Stir in cooked orzo, combine well and heat through.
- Garnish with chopped parsley before serving.
Notes
- You can substitute chicken with shrimp for a seafood variation.
- Adjust Cajun seasoning to spice preference.
