- 3 ripe bananas, mashed
- 1 cup granulated sugar
- 1/3 cup melted butter or vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with non-stick spray. Mash the ripe bananas in a bowl until smooth. In a separate bowl, whisk together the flour, baking soda, and salt.
- In a large mixing bowl, combine the mashed bananas, sugar, melted butter, eggs, and vanilla extract. Whisk until well blended and smooth.
- Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix. Fold in the chocolate chips evenly.
- Spoon the batter into the prepared muffin tins, filling each about 3/4 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Allow muffins to cool slightly before removing from the tin.
Notes
- For added flavor, sprinkle some additional chocolate chips on top before baking for a gooey topping.
- You can substitute whole wheat flour for all-purpose flour for a healthier version.
- If you prefer dairy-free muffins, use coconut oil and dairy-free chocolate chips.
