Instructions
- In a large mixing bowl, beat the softened cream cheese with powdered sugar until smooth and creamy.
- Add in the pumpkin puree, vanilla extract, and pumpkin pie spice. Mix until well combined and the mixture is thick but pliable.
- Using a tablespoon or cookie scoop, portion out the mixture and roll into small balls. Place on a parchment-lined tray and chill for 30 minutes.
- Place the graham cracker crumbs in a shallow dish. Roll each chilled ball in the crumbs until fully coated. Optional: dip in melted chocolate or sprinkle with crushed nuts.
- Arrange on a serving platter. Optional: add a drizzle of caramel or chocolate, and garnish with candies or mint.
