Instructions
- Preheat oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and melted butter; press into a 9-inch springform pan. Bake for 10 minutes.
- In a large bowl, beat cream cheese until smooth. Add sour cream, sugar, eggs, vanilla, and cinnamon; mix until well combined.
- Pour batter over the crust, smooth the top, and bake for 55-60 minutes until set. Cool completely.
- Top with churro pieces and drizzle with caramel sauce. Chill for at least 2 hours before serving.
