Ingredients
Scale
- 16 oz fresh mushrooms (button or cremini work great)
- 3 cloves garlic, minced
- 3 tablespoons balsamic vinegar
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon olive oil
- 1 teaspoon honey or maple syrup (optional for sweetness)
- Fresh thyme or parsley (for garnish)
- Salt and pepper to taste
Instructions
- Start by rinsing your mushrooms gently under cold water and patting them dry. Trim off any tough stems if necessary. Slice the mushrooms if you prefer smaller pieces or leave them whole for a more rustic presentation.
- In a mixing bowl, whisk together the minced garlic, balsamic vinegar, soy sauce, olive oil, and honey. Toss the mushrooms in this flavorful marinade, ensuring each piece is coated well. Cover and let them marinate for at least 15 minutes to absorb the rich flavors.
- Preheat your oven to 400°F (200°C). Spread the marinated mushrooms evenly on a baking sheet lined with parchment paper. Roast for 20-25 minutes, stirring halfway through, until the mushrooms are tender and caramelized around the edges.
- Once roasted, transfer the mushrooms to a serving dish. Garnish with freshly chopped thyme or parsley. Serve immediately as a delightful side dish or add to salads and pasta dishes for extra flavor.
Notes
- Ensure mushrooms are dry before marinating to enhance flavor absorption.
- Adjust marinade ingredients to suit your flavor preferences—adding chili flakes for heat or honey for sweetness.
- For extra caramelization, leave the mushrooms in the oven a few minutes longer, but watch closely to prevent burning.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
