Instructions
- In a large mixing bowl, whisk together the eggs, vegetable oil, vanilla extract, and applesauce until well combined.
- In a separate bowl, whisk together the flour, sugar, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing.
- If desired, fold in chopped nuts or raisins for extra flavor and texture.
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
- Divide the batter evenly among the muffin cups, filling each about ¾ full. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Notes
- You can substitute store-bought applesauce for homemade. Unsweetened or lightly sweetened types work best.
