Instructions

- In a mixing bowl, combine potatoes, grated onion, eggs, flour, salt, and pepper.
- Heat vegetable oil in a skillet over medium-high heat.
- Drop spoonfuls of the potato mixture into the hot oil, flatten slightly with the back of a spatula.
- Cook for 3-4 minutes on each side until golden brown and crispy.
- Transfer to paper towels to drain excess oil.
