- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 ½ cups panko breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- 1 cup marinara sauce
- 1 ½ cups shredded mozzarella cheese
- Fresh basil leaves for garnish
- Olive oil for frying
Instructions
- Pound the chicken breasts to an even thickness; season with salt and pepper.
- Set up three shallow dishes: one with flour, the second with beaten eggs, and the third with panko, Parmesan, garlic powder, and Italian herbs mixed together.
- Dip each chicken breast into flour, then egg, then breadcrumb mixture, repeating the egg and breadcrumb coats for extra crunch.
- Heat olive oil in a skillet or air fryer until hot. Fry chicken for 4-5 minutes per side until golden brown and cooked through. Drain on paper towels.
- Preheat oven to 375°F (190°C). Spread marinara sauce in a baking dish. Place fried chicken on top, spoon more marinara over each piece, then sprinkle with mozzarella and additional Parmesan cheese.
- Bake uncovered for 20 minutes until cheese is bubbly and golden. Garnish with fresh basil.
Notes
- For extra crispy coating, double-dip the chicken in egg and breadcrumbs.
- Make sure the oil is hot enough before frying to prevent sogginess.
- Use freshly grated Parmesan for maximum flavor.
- Add red pepper flakes to marinara for a spicy kick.
