- 2 medium zucchinis
- 1/2 cup grated parmesan cheese
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Slice zucchinis into 1/4 inch rounds.
- In a bowl, combine parmesan, breadcrumbs, garlic powder, oregano, salt, and pepper.
- Brush zucchini slices with olive oil and coat with the parmesan mixture.
- Arrange slices on the baking sheet and bake for 15-20 minutes until golden and crispy.
Notes
- For extra crunch, add crushed cornflakes to the breadcrumb mixture.
- Serve immediately with your favorite dipping sauce.
