- 8 oz (225g) penne or fettuccine pasta
- 2 cups sliced mushrooms
- 3 cups fresh spinach
- 1 cup grated parmesan cheese
- 1 cup heavy cream
- 2 tbsp olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Cook pasta in salted boiling water until al dente, drain and set aside.
- In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add sliced mushrooms and cook until tender.
- Pour in heavy cream, bring to a simmer, then stir in parmesan cheese until melted.
- Add spinach and cook until wilted, then combine with cooked pasta.
- Season with salt and pepper, toss well, and serve hot.
Notes
- You can substitute heavy cream with Greek yogurt for a lighter version.
- Add red pepper flakes for a spicy kick.
