- 1 large head of cauliflower, cut into florets
- 2 cups cooked shredded chicken
- 1/2 cup buffalo hot sauce
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a casserole dish.
- Blanch cauliflower florets in boiling water for 3 minutes, drain, and set aside.
- In a mixing bowl, combine shredded chicken, buffalo sauce, sour cream, salt, and pepper.
- Arrange cauliflower in the casserole dish and evenly distribute the buffalo chicken mixture over it.
- Sprinkle shredded cheese on top and bake for 20-25 minutes until bubbly and golden.
- Garnish with chopped green onions before serving.
Notes
- Use cooked shredded chicken for quick assembly.
- Adjust buffalo sauce to taste for more or less spice.
- For extra creaminess, add a dollop of sour cream before serving.
