  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 4 cups mashed potatoes (prepared with butter and cream)
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)
  • Optional: marinara sauce for added flavor

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into 12 meatballs. Set aside.
  2. Place meatballs on a baking sheet lined with parchment paper. Bake at 375°F (190°C) for 20-25 minutes until cooked through.
  3. While the meatballs bake, prepare mashed potatoes if not already done. Spread a layer of mashed potatoes in a greased baking dish.
  4. Arrange cooked meatballs evenly over the mashed potatoes. Cover with remaining mashed potatoes and smooth the top.
  5. Sprinkle shredded mozzarella over the top. Bake at 375°F (190°C) for another 20-25 minutes until bubbly and golden. Optional: broil for 2-3 minutes for a crispy cheese topping.
